Our pizzas are different to most of the pizzas you’ve eaten before. Here's why:

Our Pizza

Our Dough

Our dough is homemade in small batches, freshly kneaded, and rested for 24 hours before baking. The slow fermentation process lets complex flours develop whilst yeast and friendly bacteria break down the carbohydrates in the dough into simpler sugars. This not only creates a lighter, fluffier crust with incredible texture, but it also results in a product that is more easily digestible and healthier for you. We use organic, UK-milled, Type 00 flour, which utilises the innermost fraction of the whole wheat berry and produces elastic and extensible dough - perfect for Neapolitan pizza.

Our Oven

Unlike most mobile pizza vans, we use a real wood-fired oven to cook our pizzas at 450-500 degrees Celsius. Only at these temperatures can you achieve the characteristic taste, texture, and overall quality of a true Neapolitan pizza. The intense heat is crucial for the rapid cooking of Neapolitan pizza, typically done in just 60-90 seconds, which creates a perfect balance between a crispy exterior and a chewy interior.

We use solid oak to introduce a subtle smoky flavour to our pizza, adding to the pizza's complexity. The direct flame exposure from the woodfire produces the signature ‘leopard spots’, small charred bubbles that add a slight crunch and distinctive taste. The rapid cooking time also helps retain moisture in the dough and toppings, ensuring the pizza remains tender and flavorful without becoming dry.

Our Ingredients

We pride ourselves on using the finest ingredients to craft a superior Neapolitan pizza. Our pizzas are topped with fir di latte mozzarella made by Carnivale in London, ensuring that it is as fresh and delicious as possible when it reaches you. We use San Marzano tomatoes for our sauce, known for their balanced sweetness and low acidity, offering a robust and authentic flavour.

 

Where available, we also source fresh, organic, seasonal produce locally, ensuring that our veggies are at their peak in freshness and taste. By partnering with local farmer's markets, we bring vibrant and dynamic flavours that reflect the best of each season. Our commitment to high-quality, locally sourced ingredients supports local agriculture and results in pizzas that are not only delicious but also environmentally conscious, delivering a truly artisanal and exceptional dining experience.
